A famous Diwlai snack

Ingredients

  • 2 cups plain flour (maida)
  • 1 tbsp. Ghee
  • 1/4 tsp. ajwain (Oregano seeds) seeds
  • Salt according to taste
  • Warm water to make dough
  • ghee (clarified butter) for deep frying

Serve with

Serve with Pickle.

Method

1. Blend together maida (all purpose flour, plain flour) and salt, rub in the Ghee(clarified butter) and then add enough water to make a smooth pliable dough.
2. Make small thin rounds out of all the dough. Prick them on both sides with a fork. Allow to dry a bit for 20-30 minutes.
3. Now heat oil/Ghee(clarified butter) in a pan and deep fry a few at a time to a pale gold color.
4. Drain thoroughly and cool and store in air-tight containers.

Doughnut shaped savouries of blackgram

Ingredients

  • 1 cup urad (moong dal washed) dal
  • 1 tsp. Crushed black peppercorn
  • 1/4 cup Asafetida
  • 1 tsp. Cumin seeds
  • A handful of chopped coriander leaves
  • Oil for deep frying
  • Salt according to taste

Serve with

Serve hot with Sambar and Coconut chutney.

Method

1. Wash and soak urad dal for 6 hours.
2. Grind into a fine paste and add salt, asafetida, coriander leaves, cumin seeds and crushed peppercorns to the batter and mix well.
3. Heat oil in a Kadhai.
4. Wet your palms and take batter into the palms. Shape into a ball and make a hole in the center like a doughnut. This is now called a vada.
5. Deep fry the vadas in medium hot oil until golden brown and crisp.

Peanut TikkiAn extremely popular preparation of Tikkis made using peanuts and Bengal gram.

Ingredients

  • 1 cup Roasted peanuts
  • 1 cup Roasted chana dal (Bengal gram – split)
  • 6 mashed Boiled potatoes
  • 2 medium sized Onion, chopped
  • 4 Green chilies, chopped
  • 1 cup Bread crumbs
  • 2 tsp. Lemon juice
  • 1 cup chopped Spinach leaves
  • Finely chopped coriander leaves
  • Oil For frying
  • Salt according to taste

Serve with

Serve hot with chutney or sauce.

Method

1. Grind the roasted peanut and chana dal to a coarse mixture.
2. Add the boiled potatoes to the ground mixture, add onions, green chilies, coriander leaves, flour, lemon juice, chopped spinach and bread crumbs mix well.
3. Shape the mixture into balls, flatten them and then fry them in a medium hot oil till crisp and golden brown. Serve hot.

Ingredients

  • 1 cup semolina
  • 1 cup rice flour
  • 1/2 tsp. cumin seeds
  • 2 green chilies, chopped
  • A pinch of asafoetida
  • Few curry leaves, chopped
  • Few cahsewnut and coconut pieces
  • 1/4 tsp. soda bi-carb
  • 3 tsp. oil
  • ghee (clarified butter) or oil for frying
  • Salt according to taste

Serve with

Serve hot with coconut chutney.

Method

1. Mix both the flours and add the soda bi-carb, salt and enough water to make a very thin batter.
2. Heat the oil in a small vessel, add the cumin seeds and fry until they crackle.
3. Add the green chilies, asafetida, curry leaves and fry for a few seconds. Add this mixture to the batter.
4. Heat a tava (griddle) and grease it lightly with Ghee(clarified butter). Pour 1/2 cup batter in a circular manner, add a few cashewnut pieces and coconut pieces.
5. Pour a little Ghee(clarified butter) in the holes of the dosa, fold in a triangular shape and cook until crisp.

A quick & Easy snack

Ingredients

  • 7-8 slices of bread
  • 2 tbsp. grated coconut
  • 1 tbsp. chopped green chilies
  • 1/4 tsp. chopped ginger
  • 1 cup thick yogurt
  • 1/2 tsp. Chili powder
  • 1/2 tsp. Amchur (mango powder) powder
  • A few mustard seeds and curry leaves
  • Oil for shallow frying
  • Salt according to taste

Serve with

Tomato sauce or hot chili sauce

Method

1. Remove the edges of the bread slices, cut each into 4 squares.
2. Mix together the yogurt, chopped green chilies, ginger and salt. Apply this mixture on each square. Join two squares to form a tiny sandwich.
3. Heat oil in a frying pan, add the mustard seeds and curry leaves.
4. When they splutter, place the sandwiches in pan and fry on both sides. Serve hot .

Ingredients

  • 200 gms cottage cheese (paneer) grated
  • 3 carrots grated
  • 2 onions grated
  • 1/2 cup cabbage finely chopped
  • 1/2 cup spinach chopped, boiled and drained
  • 1 tbsp. Cornflour
  • 1/2 tbsp. Oil
  • Salt and Pepper according to taste
  • 2 tbsp. cornflakes (cereal)
  • 6 slices of bread

Advice

Just before serving only spread the mixture on the bread otherwise the bread will become soogy.

Serve with

Tomato ketchup.

Method

1. Heat oil in a pan add onion and stir fry for a minute.
2. Add all the vegetables along with salt , pepper and cornflour. Stir well and keep aside.
3. Spread the mixture on each slice of bread, sprinkle crushed cornflakes and grated paneer over the mixture.
4. Bake it in hot oven till the bread gets crisp.
5. Cut into desired shape like triangles, squares, rectangular or eat it like this only if tooo hungry.

Cheese Sandwiches

Quick & easy Breakfast if you love Cheese

Ingredients

  • 4 slices of bread
  • 2 Cheese Singles
  • 2 tsp. of chopped coriander leaves
  • 1/2 onion, chopped finely
  • 1/2 tomato , chopped finely
  • 1 tsp. Oil for cooking
  • Salt and pepper to taste
  • 1/2 tsp. green chilies, chopped finely
  • A little melted butter for brushing the sandwiches

Advice

In the filling you can add any vegetable and cook until tender before stuffing the mixture in the bread.

Serve with

Serve with Green Chutney or Tomato Ketchup.

Method

1. Cook together the onion, tomato , coriander, green chilies, salt and pepper in a little oil for 3 minutes.
2. Divide the filling into two equal portions.
3. To make a sandwich – take 1 slice of bread, place one slice of cheese ,one portion of filling in between the cheese slice, and then place another bread slice on the top.
4. Brush a little melted butter on each sandwich and toast it in a sandwich maker till well browned.
5. Repeat the same with the other sandwich.
6. Cut each sandwich into 2 triangles and eat hot.
